Making a home cooked meal is something I love to do for my family. One way to get it done in a hurry is by making a Mexican style family dinner. I love to chop up the usual suspects; tomatoes, onions, lettuce on a big cutting board. I leave them on it as a serving platter. Then I grate the cheese, throw beans on the stove and pick a meat to add to the dish. Often I’ll pre-bake several chicken breasts, or fry up a few pounds of hamburger meat for such nights. After everything is laid out, I warm up tortillas and let the kids have at it with building their own burritos . They can add as much or as little as the want of any given item. There is always salsa and sour cream on the side, usually reserved for the adults. The kids love Mexican themed nights, and whipping it up is a breeze!
